Roller assemblies with scrapers have long been known and published in different embodiments.
For example, pairs of rolls are known in which an endless dough sheet is diluted and thus rolled. A disadvantage of this design is that due to the relatively large thickness and the area moment of inertia and thus the flexural rigidity of the stripper are greatly increased. A resilient bias against the roller is thereby enabled only when high pressure and high forces. The high pressure between the roller and the scraper in turn results in increased wear and thereby unwanted removal of material of the scraper.
Thus, with roller assemblies with scrapers, there is a trade-off between, on the one hand, the elastic tension of the scraper against the roller and, on the other hand, the thickness for increasing the contact surface and for reducing wear / tear.

When commissioning of roller assemblies, it happens that the inserted front end of the dough sheet 1 adheres to a roll and is wound by this. To prevent this, a scraper 5 is provided. The recesses 11 are executed according to an embodiment slot-shaped, wherein the longitudinal extension direction preferably extends substantially parallel to the stripping edge 7. However, rectangular, round, oval or other shaped recesses are possible.
Preferably, the recesses are regularly distributed in the bending area. This means, for example, that the pressure between the scraper body and the roller is constant along the course of the scraper edge. Depending on the configuration of the stripper body, however, a constant bearing force of the stripper body on the roller may also be provided by unevenly distributed recesses.
As a direct consequence of the reduction of the cross-sectional areas, the area moment of inertia and thus the bending stiffness of the entire scraper or the entire scraper body 6 is also reduced in the bending area. As a result, the advantageous effect occurs that, despite the sufficient thickness of the wiper body 6, optimum bending elasticity is achieved.
According to a further, not shown embodiment, the recesses 11 are formed as a continuous groove or through a plurality of indentations. Also by these types of recesses, the cross-sectional area of the stripping body 6 is reduced in the bending region 8. As a further consequence, the area moment of inertia in the bending area 8 or the bending elasticity of the stripping body 6 is optimized.
